Mezcal production depends on several factors such as the distance for agave cultivation, access to the factory, services such as water and electricity, the number of families involved in the process, the size of the factory, etc.  In recent years, there has been an increase in the production and sale of mezcal, both in national and international markets, which has caused an excessive use of natural resources. The incorporation of national and international investors, politicians, entrepreneurs, professionals, distribution intermediaries, marketers, among others, has made their appearance, interested in participating in the mezcal market, causing an increase not only in the production of mezcal, but also in the number of brands.

Mezcal is produced in a large area of Mexican territory, a large part of which is protected by the Denomination of Origin (DOM). In recent years, the DOM has incorporated other producing regions since its first version did not consider all the territories in Mexico where mezcal is produced. Currently, the authorized areas include the entire states of Oaxaca, Zacatecas, Durango, Guerrero, and San Luis Potosi, and some municipalities of Michoacán, Tamaulipas, Guanajuato, Puebla, Morelos, Estado de Mexico, and, very recently, Sinaloa.
